Menu Plan Monday arrives again. There’s something comforting about that, kind of like the way there’s a rhythm to the year as well … fall follows summer, winter follows fall …
So, the arrival of Menu Plan Monday this week means that the flute breakfast for 20 or so is now history. It went quite well, thank you for those asking 🙂
If you’d like to see the menu, head over to the end of last week’s post. Most everything was a hit, although very little of the breakfast casserole was eaten. Another year, I think I might replace it with a cheesy potato-type recipe.
So, this week:
Monday: Southwest Turkey Meatloaf – daughter #3′s fave
Tuesday: Leftovers, and also a box of Monterrey burrito-type things I got really cheap recently at the store due to a sale and coupon
Wednesday: Chicken Pot Pie – I could eat this every week.
Thursday: Tacos using a Taco Bell kit I got half-price at Meijer recently. I’ve been reading Kate Gosselin’s Love Is in the Mix Cookbook lately, and want to try a few recipes from that. Don’t get me started on Kate Gosselin — I am hugely conflicted! I’ll review the cookbook in about a week, but for now, I plan to make her Asian Spiced Quinoa. I’ll post the recipe when I review the book. I’ve heard a lot about quinoa but have never cooked with it.
Friday: Poppyseed chicken –– on last week’s menu but didn’t happen. With this, Kate G’s Pineapple Apple Casserole. Again, I’ll post the recipe (if it’s good) when I review the cookbook.
