Menu Plan Monday has arrived again. Sometimes, I wish that instead of entrees each night, I could just make the yummy sides and desserts. I think I could be happy with that 🙂 Here are some good recipes I’ve made recently that wouldn’t be the focus of a meal, but I recommend all of them:
Apple Pie Snickerdoodle Cookie Bars — great for apple season. I used a package of store-bought sugar cookie mix for the cookie dough part, and made apple pie filling instead of buying a can of that.
Apple Butter Yeast Rolls — I actually made the dough into rolls and baked them in the oven; have not tried them in the crockpot as described here.
Homemade Hawaiian Rolls — delicious.
So, the week’s entrees:
Monday: Chicken Stir Fry — I just stir fry pieces of chicken breast, alfalfa sprouts, a few chopped carrots, snap peas frozen from the garden in soy sauce and serve with rice. I’ll also make the Homemade Hawaiian Rolls since the earlier time I made these was for a potluck and none of us got to try them.
Tuesday: Cheesy Chicken Tater Tot Casserole in the Crock Pot — made this a week or so ago also, but two of the girls were at a band performance, missed it, and I have heard about that …
Wednesday: Red and Black Casserole — my husband printed this out, which is a hint that he wants me to make it. He is really into beans, the kids — not so much. We’ll see how this goes.
Thursday: Chicken Helper of some sort. I am trying to wean myself from this cheap processed stuff, but there are still several boxes that were almost free after a recent sale. I began trying to sort/clean out the pantry last week and that revealed that I need to be using up more of the stuff in there.
Friday: I am in charge of a baked potato bar Oct. 4 for our band kids and guests — about 350-400 people. Pray for me. Another mom and I may try a “dry run” of the bar on this night for the flute girls before the football game. And if we do that — I am not cooking an additional meal at home! Any hints on feeding such a huge crowd? (I should add that, to add insult to injury, we are not allowed to use the school kitchens to prepare the food. Volunteering is a thankless job).
