Menu Plan Monday time again. What meal planning challenges do you face? This time of year (marching band season), it’s hard to plan dinners because the oldest two girls often aren’t here for dinner. Do I try to get something ready for them to eat before they leave (although I often can’t anyway, because I’m giving piano lessons at that time). It’s a challenge for sure to get food prepared.
Here’s the plan for this week.
Monday: pasta with homemade marinara sauce — with our abundant tomato crop this year, I’ve made a lot of sauce basically using this recipe. I bought some interesting pastas at Aldi last week and figure I’ll make some to eat with that yummy fresh sauce.
Tuesday: Oven Roasted Chicken and Veggies — easy and tastes great
Cut up a couple of chicken breasts, a couple of carrots, a couple of potatoes – put in a roasting pan, then top with 1/3 c. olive oil and a packet (actually I use 1/2 packet) of dry onion soup mix. Bake 45 minutes at 450.
Also Slow Cooker Apple Butter Rolls — just found this recipe and I have lots of homemade apple butter (well, sauce) to use.
Wednesday: Southwestern Chicken Pasta Bake — found in a magazine recently
Thursday: store-bought pizza (I’m thinking I’ll be tired by now)
Friday: homemade pancakes and applesauce
