First, I wanted to take a minute to thank my super-talented daughter Sophie for this cute blog button I use for each Menu Plan Monday. I see it each week, but I take it for granted a lot. Sophie designed it to be so cute!
Okay, this week one thought is that I need to keep using up tomatoes. That explains the chili, even in 90-degree weather (it’s not 90 degrees inside).
Monday: Easy Cheeseburger Sliders — carried over from last week. Served on homemade Hawaiian rolls. I made the rolls Sat. and froze some for this week; I brought most of them to a potluck where they were quickly devoured. They smelled really good … Oh, and I think I know why they’re called Hawaiian rolls: they contain pineapple juice.
Tuesday: Chicken Helper. I know. But it was on sale and I have 3 piano kids tonight …
Wednesday: Indian ChickPea and Vegetable Stew — found this in a magazine recently and thought it looked good.
Thursday: Wendy’s Chili — this does taste pretty close to Wendy’s. And it uses tomatoes
Friday: Cheesy Tater Tot Casserole — this has become a family favorite. Crockpot, which makes it easy to prepare. I don’t use the bacon.
