In planning the week’s Menu Plan Monday, I’m a bit overwhelmed with apples and tomatoes. What to do with so many? I may try to make a batch of applesauce this afternoon to put a dent in the bucket of apples sitting in the garage. When the weather cools off, I need to pick some of the tomatoes as well. Freeze them? Probably, although then I begin thinking that actually I should be starting to clear out freezer space for the band’s cake rolls that will arrive there in a month or so.
So, I would like the week’s menus to center on tomatoes and apples — and using up things in the freezer. Here goes:
Monday: Hamburger Vegetable Soup — uses tomatoes. I know it’s kind of hot for soup, but thank goodness for AC …
Tuesday: Fish — of the VanKamp’s variety — see above, “cleaning out the freezer.”
Wednesday: Chicken Pot Pie – I could eat this every week — because you can’t eat tomatoes every day.
… and apple dumplings for dessert.
Thursday: pancakes (and applesauce!)
Friday: Chicken Parmesan – because I’ve been making marinara sauce …
1 jar marinara sauce
4 chicken breast halves
2/3 c. shredded mozzarella
1/4 c. bread crumbs
2 T. olive oil
Pour marinara sauce in bottom of ungreased 12 x 8 dish.
Place chicken over sauce.
In small bowl, mix cheeses, bread crumbs and oil. Sprinkle evenly over chicken.
Bake at 350 30-35 min.
Serve over noodles.
