Speaking of gardens, do you need another good zucchini recipe? Here you go — made this Saturday night and it was gone by Sunday noon. To use up even more zucchini, use zucchini puree in place of 1 cup of the oil (I did; could taste no difference).
Monday: Chicken Tortilla Bake – made several times; good.
Tuesday: Hamburger Helper — Three Cheese Marinara; my daughter’s favorite from the State Fair. Side note: if you haven’t yet entered my Hamburger Helper giveaway, you just have a few days left. Do it! $50 kitchen set!
Wednesday: Pasta Prima Donna — so yummy; I’ll never forget the first time I made this and a family member said it tasted like something at an Italian restaurant. That’s not a comment I hear too often.
Thursday: Tomato and Corn Pie — great for using up corn and tomatoes from the garden. Might be iffy on whether the kids will eat it, but here’s hoping …
Friday: Lentil Loaf – delicious vegetarian version of meatloaf.
