Menu Plan Monday has arrived again. It seems kind of like the end of summer here. The fair is over, the horrendous week of high humidity and heat has ended, and band camp starts today. That means 3 weeks of 40-hours in band for 2/3 of my kids, and then school starts. It’s been a nice summer. How was yours?
Breaking news: Duchess Kate is in the hospital and will most likely have her baby today! Can you stand the excitement? I can’t!!!!
Here’s the week’s plan:
Monday: Squash Casserole — my mom got this recipe from a friend. I have never made it, but want to use some garden zucchini in it:
Bake about 40 minutes – ’til bubbly.
Most likely I’ll make scones too, to celebrate the new royal baby! Can you tell I’m excited???
Tuesday: grill! Wanted to do this last week, but the heat index over 100 just said no. I have veggie burgers, hot dogs, and hamburgers. Maybe I’ll try veggies too?
Wednesday: Chicken Curry – I like this and have not made it in a while.
Friday: Oven Roasted Chicken and Veggies — easy and tastes great!
Cut up a couple of chicken breasts, a couple of carrots, a couple of potatoes – put in a roasting pan, then top with 1/3 c. olive oil and a packet (actually I use 1/2 packet) of dry onion soup mix. Bake 45 minutes at 450.
