Menu Plan Monday again. This is the last full week of school here. It’s been a long year since last mid-August, but then again, it’s also gone by quickly. So in between retirement celebrations (of my first school principal boss) and dance recital rehearsals, we’ll be eating as well. Here’s the plan:
Monday: Lasagna — this looks similar to my recipe; I like to add spinach because it’s an easy way to add a really healthy veggie that the kids will actually eat in this form. Also garlic parmesan pull-apart bread. I haven’t tried this, but it looks delicious!
Tuesday: Cheesy Chicken Crockpot Tater Tot Casserole — delish, and great for a night where I’m busy up to the last minute.
Wednesday: fish — baked frozen tilapia, and probably some boxed type too for the kids — also a veggie
Friday: Greek Pasta Salad — I saw this in a magazine that came this week and it looked yummy and great for summer. Not sure any of the kids will eat it, but hey — that’s five days away. I’ll think about that dilemma later 🙂
I was also inspired by a magazine article I read last week to look in the back of the fridge and clean out a few things. This Memorial Day morning, I’m happy to report that I finished up a years-old half jar of orange marmalade to make breakfast rolls that are yummily rising 🙂
