Menu Plan Monday

painting letters craftWe survived our busy week, culminating with a Friday slumber party. Here is the group, happily painting wooden letters from good ol’ Hobby Lobby. How was your week? Here, it is stillย  cool and rainy. Still waiting for spring; waiting for weather good enough to plant things outside. One of these weeks …

Menu Plan Monday has arrived again. Here’s how it looks here:

Monday: Fish (the boxed variety, which is popular here) along with rice and a veggie.

Tuesday: Cheesy Tater Tot Casserole — this has become a family favorite. Crockpot, which makes it easy to prepare. I don’t use the bacon.

Wednesday: Wendy’s Chili — this does taste pretty close to Wendy’s. It makes a lot, which is good because I plan to use some for Saturday’s baked potato bar.

Wendy's chili

Thursday: eat out! Mystery shop at a ribs place, and I don’t even like ribs. I’ll find something else though ๐Ÿ™‚

Friday: Black Bean and Corn Quesadillas — made these before and they are good. I try to do at least one or two vegetarian meals each week — daughter #2 is a vegetarian, plus it’s healthier ๐Ÿ™‚

Saturday: relatives are coming to celebrate all 3 girls’ birthdays. I am planning to have a baked potato bar.

  1. How I wish I could accompany you on the ribs shop. I LOVE ribs!

  2. On my plan this week: 15 Bean Soup & Cornbread, Chicken and black bean Quesedillas, Meatloaf, Crockpot Teriyaki Chicken with fried vegetable rice, Stuffed Italian Shells…..and still in search of a Sunday dinner. I’m going to have to snatch your Wendy’s Chili recipe, though! ๐Ÿ™‚

  3. Looking forward to the baked potato bar!!! I can bring shredded cheese and anything else you need.

  4. I’d love to be a part of the baked potato bar, if I only lived closer. Have a good time.

Thanks for taking the time to comment. I enjoy hearing your thoughts.
