Menu Plan Monday

menuplanmondaySo another Menu Plan Monday has arrived. They seem to come back so often … I had hoped by now that spring would be making its presence felt, but she’s not — at least not in our part of the world. Looks like highs in the 30s all week. Any signs of spring at your place?

Here’s the week’s menu plan:

Monday: Chicken Parmesan – a family favorite, and EASY!

1 jar marinara sauce

4 chicken breast halves

2/3 c. shredded mozzarella

1/4 c. bread crumbs

2 T. olive oil


Pour marinara sauce in bottom of ungreased 12 x 8 dish.

Place chicken over sauce.

In small bowl, mix cheeses, bread crumbs and oil. Sprinkle evenly over chicken.

Bake at 350 30-35 min.

Serve over noodles.

Tuesday: Spicy Potato Casserole — – from an Amish Cook column in our newspaper; my daughter loves it.

1.5 lb browned ground beef

1 pkg taco seasoning

1 small onion, diced

8 medium potatoes, boiled and shredded (or use a bag of hashbrowns)

4 T butter, melted

2 cups shredded cheese

1 t. salt

1 pint sour cream

1 can cream of mushroom soup

1 soup can milk

2.5 cups crushed corn chips

Combine ground beef, taco seasoning and onion.  Put mixture in bottom of 9 x 13 dish.  Mix potatoes with butter, cheese, salt, sour cream and soup.  Mix with milk.  Spoon over hamburger mixture.  Top with remaining chips.  Bake 45 minutes at 350.


Wednesday: Chicken and Spinach Pasta Bake — new recipe to me; looks yummy.

Thursday: Stacked Burrito Pie — made it before; delicious.

  1. If spring involves a wintry mix, we’re having spring here. Actually, the wintry mix hasn’t yet begun but it’s supposed to arrive by this afternoon. As I dressed this morning, the windchill factor was 8. The outside temp was 27 as I drove to work this morning. Bring on spring!
