Welcome to another Menu Plan Monday! Since it’s March, I keep thinking spring is just around the corner. And wouldn’t you know it, last Wednesday we were greeted with 10″ of snow.
But now it’s in the 50s, and most of the snow has melted. It’s a busy week of evenings, so here is my quick and easy menu plan:
Monday: Chicken Lasagna – left from last week; I didn’t get it made then. I did, however, get the chicken cooked for it
Tuesday: Stir fry — I cut up a few carrots, a chicken breast, and add snow peas and cook that in a skillet with soy sauce. Add a package of beans sprouts and served with rice.
Wednesday: Fish (just from a box; my kids don’t like “regular” fish) and couscous
Thursday: Tortilla Soup (an easy family favorite)
16 oz. refried beans
14.5 oz. chicken broth
5 oz. chunk chicken (I usually just cook 1 chicken breast)
15.5 oz. black beans, rinsed
3/4 cup salsa
Combine all ingredients. Bring to a boil, then reduce heat and simmer 10 min.
Crumble a few tortilla chips in the bottom of each bowl.
Ladle soup over chips and sprinkle with cheddar cheese.
It’s excellent with tortilla chips.
I usually double this, with 3 teens/tweens in the family.
Friday: Slow Cooker Pizza Pasta — I have made this before and it’s good.

I once had a recipe for tortilla soup, but I’ve misplaced it. I don’t care for refried beans, as your recipe requires, so I’m wondering if there’s another recipe floating around out there that doesn’t use refried beans. I guess I’ll have to do some research.
I am glad you faithfully provide food for your family. Being a good mother is a mission.
