So, another Menu Plan Monday has arrived. It’s a more laid-back week, since my husband is away for work. Over the weekend, we watched Fat, Sick & Nearly Dead, a movie about a guy who was — well — fat, sick, and nearly dead. He decided to eat healthy (which in case involved a 60 day “reboot” where he only drank juices made of fruits and veggies), and he lost a ton of weight, got off all his meds, etc. It inspired most of us to eat healthier. I’m not planning on juicing, but still. We could all eat a little better than we do.
Here’s our plan:
Monday: Fish and couscous (one of the girls loves couscous)
Tuesday: Wendy’s Chili — it is pretty similar
Wednesday: Chicken Lasagna – this is similar to my recipe; it’s something the pastor’s wife brought over after my oldest daughter was born. It’s really good, and is a good recipe to double and put one in the freezer.
Thursday: Potato Soup – probably bread in the bread machine, too
Friday: treat eat-out night
