Busy week here — yet again. I’m playing organ for Wednesday’s Lent service, and Saturday will be ISSMA state contest for 5 kids I’m accompanying, plus my oldest daughter who is playing in a quartet. That’s down in Indianapolis, so if you think about the kids on Saturday, wish them luck. I haven’t been to state contest since 1983 when I competed on my oboe. Nerve-wracking and exciting all at once!
So, here’s the week’s Menu Plan Monday:
Monday: leftover buffet — the fridge is overflowing!
Tuesday: Tortilla Soup (an easy family favorite)
16 oz. refried beans
14.5 oz. chicken broth
5 oz. chunk chicken (I usually just cook 1 chicken breast)
15.5 oz. black beans, rinsed
3/4 cup salsa
Combine all ingredients. Bring to a boil, then reduce heat and simmer 10 min.
Crumble a few tortilla chips in the bottom of each bowl.
Ladle soup over chips and sprinkle with cheddar cheese.
It’s excellent with tortilla chips.
I usually double this, with 3 teens/tweens in the family.
Wednesday: Fish (VanKamp’s; nothing fancy) and couscous
Thursday: Fritos Pie – in the newspaper today; sounds good and really easy (kind of like nachos?)
Friday: Campbell’s Go Soup mixes are on sale at Meijer this week and they look tasty — I’ll probably make one tonight with bread machine bread. Here’s more info on them, and a $1 coupon. Have any of you tried them?

I am impressed that you plan out the weekly menu, but I guess you have to with a family. I am still trying to have enough protein, limit sugar and fat grams, etc. Not much fun. Happy eating!!!! And, good luck Caroline!!!!!!
Your menu sounds good. Frito pie is great! My mom made that for our family growing up, and I recently introduced my husband to it as well.
