My husband is gone this week, making for a more relaxed cooking week. Also, ISSMA contest is over, so there will be no kids for me to rehearse with this week. It’s nice to have a bit of a breather! Here are the plans:
Monday: Oven Roasted Chicken and Veggies — easy and smells/tastes great!
Cut up a couple of chicken breasts, a couple of carrots, a couple of potatoes – put in a roasting pan, then top with 1/3 c. olive oil and a packet (actually I use 1/2 packet) of dry onion soup mix. Bake 45 minutes at 450.
Tuesday: Mashed Potato Bowls — a daughter said they have these at school and they are delicious. They do look yummy to me!
Wednesday: Cheeseburger Pie — always been a favorite of the girls’.
Thursday: Beef Taco Bake — I have made this for years. Quick, easy, and tasty.
Friday: Chicken and Rice — making this since my husband doesn’t like broccoli so the rest of us have to enjoy it when he’s gone.
