Another Monday, and this week it feels more like Monday than usual. Dark. Raining outside. And although I’m holding it together, I can’t shake the feeling of falling into a bottomless pit from Tuesday’s election. Anybody see a bright side to it? Because for the life of me, I can’t.
But I am beginning to formulate plans. Nothing too radical, but mainly just more of what I already am doing: growing as much of our own food as I can in the garden. Planning meals around what I already have, and on what’s on sale and on what has coupons. Trying to “live small,” basically.
Here’s the week’s plan:
Monday: Chicken Pot Pie — I’d like to eat this every week
Tuesday: mystery shop at a local Italian restaurant. Yummy, and fun not to cook — although filling out the report will take at least an hour. This one is a doozy …
Wednesday: Leftover buffet — lately, leftovers mean that I have made something that the family didn’t like. Oh well — it will be making an encore appearance.
Thursday: Chicken Parmesan – a family favorite, and EASY!
1 jar marinara sauce
4 chicken breast halves
2/3 c. shredded mozzarella
1/4 c. bread crumbs
2 T. olive oil
Pour marinara sauce in bottom of ungreased 12 x 8 dish.
Place chicken over sauce.
In small bowl, mix cheeses, bread crumbs and oil. Sprinkle evenly over chicken.
Bake at 350 30-35 min.
Serve over noodles.
Friday: Cheese-Stuffed Breadsticks — these are really good.
