Menu Plan Monday

menuplanmondayThis week on Menu Plan Monday, you might notice a theme: lots of dishes involving tomatoes. That’s because the tomatoes are all coming ripe and need to be used. I made tomato sauce with a bucketful Saturday, but had a problem.

I washed and quartered the tomatoes and pot them in a pot, simmering for about 10 minutes. Then I put them through a food mill, into onions and garlic I had sauteed. I let it all simmer a few hours … and it was basically tomato juice. Totally liquid and runny. It was okay … we had it on pasta that night … but still, I wish it were a thick (or even thick-er!) sauce. Anybody know what the problem is?

Here’s the agenda:

Monday: Chicken Parmesan – a family favorite, and EASY!

1 jar marinara sauce

4 chicken breast halves

2/3 c. shredded mozzarella

1/4 c. bread crumbs

2 T. olive oil

noodles (“nudeln”)

Pour marinara sauce in bottom of ungreased 12 x 8 dish.

Place chicken over sauce.

In small bowl, mix cheeses, bread crumbs and oil. Sprinkle evenly over chicken.

Bake at 350 30-35 min.

Serve over noodles.

Tuesday: Skillet Taco Pie

Wednesday: Mrs. T’s Pierogies — sold in the frozen section of the store, and great for heating up quickly on busy nights.

Thursday: White Turkey Chili — I love a good white chili 🙂

Friday: Chicken Stir Fry — I just cook a couple of cut up chicken breasts in a wok, then add a package of bean sprouts, a chopped carrot, some snow peas, and soy sauce. Serve over rice.

  1. What kind of tomatoes did you use? Romas will usually cook up thicker than slicing tomatoes. Also, maybe try adding some tomato paste to thicken?

    I’ve been roasting tomatoes with garlic, then just pureeing them with a splash of wine – skins and all! It makes a wonderful, thick sauce.

  2. Your week’s menu sounds delicious. Maybe I’ll drive down for dinner each evening. How would that be?
