Especially in summer, I like to cook healthy foods. Maybe it’s because all that healthy green food is staring at me through the kitchen window in the garden? Whatever the reason, I was happy to learn that Meijer, where I usually shop, is a partner with Produce for Kids in the Get Healthy, Give Hope campaign.
Celebrating a milestone 10th birthday in 2012, Produce for Kids is excited to kick off this year’s campaign with a new partnership with Sprout and LazyTown. During the campaign, which will run now through June 23rd, Meijer will offer shoppers collectible Produce for Kids’ Ideal Meals– quick and easy healthy meal ideas, which are free and can be found in displays featuring LazyTown characters from the popular, health-focused children’s series airing exclusively in the U.S. on 24-hour preschool television channel Sprout.
In-store food demos will be taking place in all Meijer stores on Saturday, June 9th. Ideal Meals will be made so feel free to stop by your local Meijer store to check out the fun with your family.
Here are my menu plans for the week:
Chicken Parmesan – a family favorite, and EASY!
1 jar marinara sauce
4 chicken breast halves
2/3 c. shredded mozzarella
1/4 c. bread crumbs
2 T. olive oil
Pour marinara sauce in bottom of ungreased 12 x 8 dish.
Place chicken over sauce.
In small bowl, mix cheeses, bread crumbs and oil. Sprinkle evenly over chicken.
Bake at 350 30-35 min.
Serve over noodles.
Also, in honor of the Queen’s Diamond Jubilee, gingerbread scones. They are delicious!
Tuesday: Tacos – nothing special. I’ll just make “taco meat” and put out bowls of toppings for tortillas.
Wednesday: Garden Pasta Bake – easy; combines pasta and veggies in a meatless dish
Thursday: Calico Beans
Friday: I will be gone on a school trip for several days with my youngest daughter. I wonder what the others will come up with for dinner???
