Menu Plan Monday


You’re probably tired of hearing this, but it’s another busy week ahead. This time, we have meetings 3 of the 5 weeknights, as well as 3 performances of daughter #3’s fifth grade musical, “The Wizard of Oz.” Get ready for all kinds of cuteness with munchkins and flying monkeys!

So, here’s the menu plan, such as it is:

Monday: Southwest Chicken Lasagna

Tuesday: Roast Chicken and Veggies – a favorite, and I’ve made it so many times I could probably prepare it blindfolded:

Cut up a couple of chicken breasts, a couple of carrots, a couple of potatoes – put in a roasting pan, then top with 1/3 c. olive oil and a packet (actually I use 1/2 packet) of dry onion soup mix.  Bake 45 minutes at 450.

Wednesday: I’m going all-out and planning maybe frozen pizza? I’m sure I will need an easy day at this point.

Thursday: Tortilla Pie

Friday: Taco Soup

Last week, I made Lisa‘s Black Forest Pie, even though I didn’t even have the cherries (I was that desperate for a chocolate dessert). It was delicious, and this week I may buy the cherries and make it again :).
