What’s on your cooking agenda this Menu Plan Monday week? I’m excited that the weather is looking better (finally warmer). May begins, and as  usual, it’s a really busy month. I’ll be looking for easy-to-prepare dinners (yeah, I know. Not much different from any other time of year).

Monday: Dijon Fish with Spinach and Tomatoes – I can’t find the recipe for this, but basically you mix Dijon mustard, 1/4 cup Italian dressing, and brush that onto your choice of fish fillets. Broil 10 minutes and serve with rice and a mixture of 1 cup tomato, more mustard, onion, and 10 oz. spinach that you’ve cooked on the stove top 5 minutes. I make baked fish a lot, and am always on the lookout for recipes to change the presentation a little.

Tuesday: Roast Chicken and Veggies – a favorite, and I’ve made it so many times I could probably prepare it blindfolded:

Cut up a couple of chicken breasts, a couple of carrots, a couple of potatoes – put in a roasting pan, then top with 1/3 c. olive oil and a packet (actually I use 1/2 packet) of dry onion soup mix.  Bake 45 minutes at 450.

Wednesday: Savory Bean and Spinach Soup

A few years ago, I was eating lunch with some women I used to teach with. We commented about the soup of the day being good, and one lady jokingly asked for the recipe. We were surprised when the waitress actually gave it to us!

2 qt. chicken broth

1 #10 can diced tomatoes

1 #10 can northern beans

1/2 box long grain wild rice

1 large onion, diced

garlic powder

parsley

salt/pepper

1/2 bag of fresh spinach

parmesan cheese

Thursday: Make your own pizza: I make the crust, everyone adds toppings of choice to his/her own pizza

Friday: Orange Chicken Stir Fry – this looks pretty close to my recipe.

  1. EVERYTHING sounds good! Your family might like the Turkey Leg Pot roast I’m making this week. We will definitely be trying your fish and that stir-fry!

  2. I’m definitely not into anything using cooked spinach. I love it raw, but cooking it makes it so slimy, in my opinion. Hope your children never share my opinion.
