Menu Plan Monday


Happy Menu Plan Monday after Easter! I hope you were able to enjoy yesterday and reflect on the reason for the celebration. We always attend a family gathering late Sunday afternoon. It’s 4 hours from home, and the girls get on the bus Monday morning prior to 7 a.m., so it’s always a bit stressful — but I’ve learned to roll with it. Baby steps ๐Ÿ™‚

So, you’ll notice a few repeats from last week on this week’s menu plan. We got to eat out twice last week!

Monday: Roast Chicken and Veggies โ€“ a favorite, and Iโ€™ve made it so many times I could probably prepare it blindfolded:

Cut up a couple of chicken breasts, a couple of carrots, a couple of potatoes โ€“ put in a roasting pan, then top with 1/3 c. olive oil and a packet (actually I use 1/2 packet) of dry onion soup mix.ย  Bake 45 minutes at 450.

Tuesday: Southwestern Turkey Meatloaf โ€“ itโ€™s from the April Better Homes and Gardens; canโ€™t find the recipe online. The girls always request meatloaf but my husband hates it. This sounds good; weโ€™ll see. It has beans in it, which he should like.

Wednesday: BBQ Chicken and Cheddar Sandwiches (minus the bacon)

Thursday: Slow Cooker Chicken Tacos

Friday: Make your own Pizza – I make dough; everyone puts on toppings they like

One note: don’t try the breakfast empanadas I linked to last week. I spent quite a bit of time preparing them, only to have my daughter declare the dough inedible (I’ll admit, it looked pretty crumbly). I’ll have to keep looking for a recipe there.

  2. Say, do you have a Goya aisle in your supermarket? They have frozen empanada rounds – the dough is already made – just fill and bake. Worth a try – I can’t get empanada dough right either. ๐Ÿ˜•

  3. Oops on those breakfast empandas! And good tip from the other lady on the frozen dough!

    My son is the meatloaf lover here, but it has to be OUR meatloaf and no other! (The one on the back of the Mrs. Grass’s Onion Soup Mix! plus my glaze.)

  4. Yesterday I wanted to make Zucchini Patties and couldn’t find my recipe. I did a search on your blog and there it was! I will add I used zucchini I froze in 1990 and it was just fine! I defrosted my freezer on Good Friday and one thing led to another.
