Menu Plan Monday

menuplanmondayI’m running behind this week (not too good since it’s only Monday morning), so let’s get right to the menu:

Monday: White Turkey Chili – even with the weather getting nicer, I’m not quite ready to give up soup.

Tuesday: Chicken and Noodles – no real recipe; I just cook some chicken breasts along with broth, carrots, onions, celery, etc. Then I make and add homemade noodles.

Wednesday: Southwestern Turkey Meatloaf – it’s from the April Better Homes and Gardens; can’t find the recipe online. The girls always request meatloaf but my husband hates it. This sounds good; we’ll see. It has beans in it, which he should like.

Thursday: Roast Chicken and Veggies – a favorite, and I’ve made it so many times I could probably prepare it blindfolded:

Cut up a couple of chicken breasts, a couple of carrots, a couple of potatoes – put in a roasting pan, then top with 1/3 c. olive oil and a packet (actually I use 1/2 packet) of dry onion soup mix.  Bake 45 minutes at 450.

Friday, we’ll be off to Easter. Another busy, busy week. I hope yours is good!

  1. Wow, I know what you mean about being behind – here I am, reading your Monday post on Tuesday afternoon. . .

    Let me know how the empanadas come out – I’m looking to find some time to put something breakfast-y in the freezer. 😀
