Menu Plan Monday! It looks like a great week coming up. That has nothing to do with cooking really, but everything to do with the great weather! 60s and 70s all week … I’m hoping my husband will plow the garden (I have strawberry plants arriving that I ordered last fall), and I need my photographer, model, and designer (those would be my daughters) to do a photo shoot for the cover of the next installment in my Kingdom Kids series. Would you believe the book has been done a couple of months and the release has just been waiting on decent weather to shoot a good cover? Ah, the authoring life :).

Here’s what’s cooking:

Monday: Foil Packet Chicken – the kids love this, and I like the way each packet can be individualized according to what that person likes.

Tuesday: Lasagna Soup – I use 1 sausage rather than a pound (we very rarely eat sausage anyway, so I prefer it more as a condiment than a main meal feature) to keep down the fat. It’s yummy!

Wednesday: Chicken Parmesan – a family favorite, and EASY!

1 jar marinara sauce

4 chicken breast halves

2/3 c. shredded mozzarella

1/4 c. bread crumbs

2 T. olive oil


Pour marinara sauce in bottom of ungreased 12 x 8 dish.

Place chicken over sauce.

In small bowl, mix cheeses, bread crumbs and oil. Sprinkle evenly over chicken.

Bake at 350 30-35 min.

Serve over noodles.

Thursday: Mexican Stuffed Shells – new recipe to me; looks delish.

Friday: Make-Your-Own Pizza – I make the dough, everyone makes their own individual pizza with toppings of choice.

I may have to try this Chocolate Mint Brownies too — just since it’s St. Patrick’s Day 🙂

  1. Happy Monday Susan, from another Susan . . . I have been looking for small bites of taste sensations. I’ve lost thirty pounds and two things that I am contributing it to are low or no carbs and my two or three bites plan. This has made me have the “hungries”. I search during the day for something.. anything to fix that want. This past weekend it was a Butternut Squash. All I did was pierce it several times, put it on a glass pie dish and baked it until it was knife tender. Cut it open, cut through the thick neck part, slathered it with a generious amount of butter and some salt. And then I saw the jar of Molasses. I drizzled about two tablespoons across the hot buttery brillant orange delight and Wahla! I had a memory.That’s all I ate. Nothing else. And I savored every single bite and ever did the unthinkable… I ran my finger around the bottom of the bowl to get the last Molasses and burter drop.!
