And just like that, it’s the week after Christmas. How does the day itself always go by so quickly? That’s why I try to enjoy the entire season, and I usually succeed 🙂
We’re back to cooking (and hopefully, a bit lighter eating) this week. Here’s the agenda:
Monday: Vegetable Fried Rice – I have never made this before, although I like it in restaurants. I found this recipe in a magazine and it looks pretty easy. I’ll probably add chicken to it.
Tuesday: pancakes – the kids love “pancakes and applesauce for dinner” days
Wednesday: leftover buffet – the fridge needs clearing out, and I know there’s a pot of chili left from last week …
Thursday: Roast Chicken and Veggies – a favorite; yummy and easy
Cut up a couple of chicken breasts, a couple of carrots, a couple of potatoes – put in a roasting pan, then top with 1/3 c. olive oil and a packet (actually I use 1/2 packet) of dry onion soup mix. Bake 45 minutes at 450.
Friday: Chicken Lasagna – this is similar to my recipe; it’s something the pastor’s wife brought over after my oldest daughter was born. It’s really good, and is a good recipe to double and put one in the freezer.
