Menu Plan Monday time –Here we are, in the “countdown to Christmas” phase of the year. Fun and exciting to be sure, but also a bit crazy busy. It can be difficult to find easy menus for the month. Here’s my look ahead at a busy week:

Monday: Corn and Cheese Enchiladas – I’ve had this in the ‘to try’ pile for awhile, and this is the week.

Tuesday: Chicken Casserole – commenter Leona pulled out a magazine page for me with this on it (do you exchange “piles” with friends, of things you think the other would enjoy? It’s fun!)

Wednesday: Some type of bread machine bread and soup … it may be canned (yikes!). I have 3 piano students and then the girls and I are visiting the Animal Shelter’s open house, which goes right up until dinner time.

Thursday: leftover buffet … youngest daughter and I are participating in the school choir tour and will eat pizza at that 🙂

Friday: Tortilla Soup – a family favorite!

16 oz. refried beans

14.5 oz. chicken broth

5 oz. chunk chicken (I usually just cook 1 chicken breast)

15.5 oz. black beans, rinsed

3/4 cup salsa

Combine all ingredients.  Bring to a boil, then reduce heat and simmer 10 min.

Crumble a few tortilla chips in the bottom of each bowl.

Ladle soup over chips and sprinkle with cheddar cheese.

Need a yummy and easy dessert? The girls and I made Chocolate Peanut Butter Bars over the weekend – no baking and delicious!

  1. Mmmm That Tortilla Soup sounds delish & easy! I’ve been wanting to make something similar to this, but all the recipes I’ve found call for sooo many ingredients that I don’t normally have in my pantry… this sounds doable! Can’t wait to try it!
