Peanut Butter Cup Pie

Once again, a new school year has sneaked up. The kids were back to school Monday, and I needed to come up with a fun back-to-school treat for them when they got home.

Over the years, things change. Five years ago, I was making school bus-shaped cakes. Now, with kids in grades 5,7, and 9, deliciousness is prized over cute.

What’s universally yummy? Peanut butter cups, of course. And what’s more tasty than a peanut butter cup pie?

I’d had this recipe on the “to make” pile for awhile, and this was the perfect time to pull it out.

Peanut Butter Cup Pie

1 pkg. (8 oz.)  Cream Cheese, softened
1/2 cup  plus 1 Tbsp. Peanut Butter, divided
1 cup cold milk
1 pkg.  (3.4 oz.) Vanilla Flavor Instant Pudding
2-1/2 cups thawed P Whipped Topping, divided
1   OREO Pie Crust (6 oz.)
3 squares Semi-Sweet Chocolate
Beat cream cheese and 1/2 cup peanut butter in medium bowl until well blended. Add milk and dry pudding mix; beat 2 min. Whisk in 1 cup whipped topping; spoon into crust. Refrigerate until ready to use.
Meanwhile, microwave remaining whipped topping and chocolate in microwaveable bowl on HIGH 1-1/2 to 2 min. or until chocolate is completely melted and mixture is well blended, stirring after each minute. Cool completely.
Spread chocolate mixture over pudding layer in crust. Microwave remaining peanut butter in small microwaveable bowl 30 sec.; stir. Drizzle over pie. Refrigerate 4 hours or until firm.

Like most Kraft recipes, it’s easy to whip up. I try to make things from scratch whenever I can, as I figure it’s healthier and less expensive, but I must confess I ended up buying a ready-made Oreo crust rather than making one. I felt a little guilt for that, but then upon further thought I decided that there was no particular merit in creating a crust from Oreos rather than buying one ready-made :).

Basically, whip up the cold stuff and pour it into the crust.

It was very similar to this Chocolate Chip Peanut Butter Pie, which we like as well.

    How true!
    Look at the final picture of your three daughters. They are GROWING UP! That is what you want them to do, but it certainly brings in a new set of issues, both good and not so good.

  3. Sounds fabulous!!! FYI–I thought of your gum wrapper chain post (or the post that mentioned them anyway!) I was in Mejier Saturday and they had TEABERRY gum! My aisle featured a display of great retro candy including Teaberry and Fruit Stripe gums (fruit stripe was my favorite).
