Strawberry Pizza

My strawberry patch has been really pathetic this year. I think I got less than three quarts of berries the entire season. But, this is its seventh or eighth year, so I probably need to plow it up and start afresh next year.

Since my usual berry glut didn’t happen, I took advantage of a recent sale on strawberries at Kroger and bought four pounds. I made freezer jam, but what else could I make?

Strawberry Pizza


q 1-1/2 cups flour

1/4 cup brown sugar

1 cup butter

1/2 cup chopped pecans


One 8-ounce package of cream cheese

8 ounces of Cool Whip

3/4 cup powdered sugar


One 3-oz. package of strawberry gelatin

1 cup water

4 cups sliced strawberries

q 1/2 cup sugar

q 4 tablespoons cornstarch

To make crust, in a large bowl, mix all ingredients to form dough. Spread into pizza pan.

Bake at 400 for 15 minutes.

For filling, mix cream cheese and sugar. Fold in cool whip. Spread over cool crust.

For topping, in a separate bowl, combine gelatin, sugar and 1/2 cup water.

In another bowl, dissolve cornstarch in remaining water. Stir into gelatin mixture Cook over medium heat until thickened. Stir in strawberries until coated. Cool. Spread on top of filling and chill.

This can also be used for peaches or blueberries.

strawberry pizza… and putting it all together. Yummy!

This was an easy recipe, and it was quite refreshing after a hot evening at the fair.

  2. Well it’s time for my breakfast oatmeal. In my mind, I’m gonna pretend I’m eating the strawberry pizza instead. Yum – I’m lovin’ this!
