Menu Plan Monday

menuplanmondayThis should be a fun Menu Plan Monday. First, at my house, my husband is traveling all week, which is great because it means I can relax my cooking a little. Second, Prince William and Kate Middleton are getting married this week! and I plan to celebrate a little with my menus. Third, one of my girls has a birthday this week. Too much celebrating for one week, huh?

Here’s the plan:

Monday:  Skillet Chicken Nachos

Tuesday:  I think I will splurge and get pizza tonight. Woo hoo!

Wednesday:  Roasted Chicken and Vegetables – a family favorite.

The house smells great when this is baking! Cut up a couple of chicken breasts, a couple of carrots, a couple of potatoes – put in a roasting pan, then top with 1/3 c. olive oil and a packet (actually I use 1/2 packet) of dry onion soup mix.  Bake 45 minutes at 450.

I just made this last week, but my daughter wanted it for her birthday so I’m making it again. It’s okay – I love it too! She has requested chocolate cake for dessert :). Welcome to the double digits, daughter #3!

Thursday:  Royal Wedding Scones – I tried these last week and they are so yummy! This week, I may try some with chocolate chips and some with fruit (not sure if my crowd will go for blueberries or not).

On a less exciting note, we’ll probably clean up some leftovers as well.

Friday:  Cottage Pie, said to be Prince William’s favorite childhood dish. What a fun way to celebrate his wedding day by making this!

For dessert, cupcakes with Kate Middleton cupcake toppers.

  3. I loved your post! The British chef’s point of view on the Royal Family and their food was especially interesting. All of the recipes sound very good. I am intrigued by the Cottage Pie that you are making on Friday. The only thing that I wonder about is the nutmeg? You must tell me how that turns out and if the girls like it. HAPPY BIRTHDAY, SOPHIE! Have a fun week all of you.

  4. I’m with Leona. I couldn’t handle the nutmeg, since that is a spice I despise. Your mom cooks with it often, which ruins anything, in my humble opinion.
