Nothing new or exciting for Menu Plan Monday this week. I have a serious case of the blahs with cooking – that feeling that everything I make is something I’ve made before. Last night my daughters were at friends’ houses and talking about the pizza they had eaten. It sounded so good that it made my mouth water!
But I digress. Here’s what I’ll be cooking this week. It’s a busy week, and I have a meeting or obligation every single weeknight except for Friday, as well as 14 piano students coming. Prayers appreciated!
Monday: Calico Beans with whole wheat bread from the bread machine
Tuesday: Shepherd’s Pie – Haven’t made this in awhile
Wednesday: Turkey Noodle Soup – I must confess, I’m making this with a dry soup mix I bought at Gordon Food Service. I’ll also make French bread in the bread machine.
Thursday: Cheddar Chicken Spaghetti – thankfully I made an extra last month, and this is ready in the freezer.
Friday: Roasted Chicken and Vegetables – a family favorite. The house smells great when this is baking! Cut up a couple of chicken breasts, a couple of carrots, a couple of potatoes – put in a roasting pan, then top with 1/3 c. olive oil and a packet (actually I use 1/2 packet) of dry onion soup mix. Bake 45 minutes at 450.
