Menu Plan Monday

menuplanmondayThis Menu Plan Monday, I am contemplating the term Spring Break. First, it’s hard to believe it’s really spring, with frost on the ground this morning and gray, overcast skies all week.

And is it really a break with everyone home? Not so sure about that one either. Anyway. We all still need to eat, so menu planning goes on. Here’s how our week looks:

Monday: Black Bean and Corn Quesadillas

Tuesday: Turkey Soup – maybe this one; I have some turkey and turkey bones left from the turkey breast I cooked last week.


Chicken Parmesan – easy and yummy

1 jar marinara sauce

4 chicken breast halves

2/3 c. shredded mozzarella

1/4 c. bread crumbs

2 T. olive oil


Pour marinara sauce in bottom of ungreased 12 x 8 dish.

Place chicken over sauce.

In small bowl, mix cheeses, bread crumbs and oil. Sprinkle evenly over chicken.

Bake at 350 30-35 min.

Serve over noodles (I will make homemade noodles).

Thursday: Chicken Enchilada Manicotti – I have never made this but found it on Ragu’s Facebook page and it looked good. It includes sofrito, which I had never heard of. Hmmm ….

Friday: Going to visit relatives, which means no cooking. Woo hoo!
