How is it where you are? Here it is snowy. Cold and snowy. As in, there are 3′ ridges of snow lining each side of the driveway. As in, the fire hydrant out front is halfway buried. As in, 3 of the last 5 days of school were canceled and will be made up in June 🙁
It seems like a good week for warm food. Here’s the week’s Menu Plan Monday:
Monday: Lasagna – this is similar to my recipe, but I leave out the meat and add a layer of spinach. We’ll also have French bread from the bread machine.
Tuesday: Chicken Fingers with Mustard Dipping Sauce – I saw this recently in Shape magazine and thought it looked good, although I’ll be leaving out the walnuts as I don’t like nuts of most any kind. I have gotten a lot of the panko-type crumbs lately on sale.
Wednesday: Fish night – baked tilapia sprinkled with lemon-pepper seasoning and served with rice and some type of vegetable.
Thursday: Chicken and White Bean Chili – from the freezer; made it a few weeks ago 🙂
Friday: Calico Beans – again with homemade bread.
