Cold, cold January is almost history, but it leads to cold, cold February. I was looking at the February stats in the newspaper, and noticed that the daily highs and lows stay about the same for the first two weeks of the month, but then improve by two degrees each of the last two weeks. So hang in there – the end is in sight!
This kind of weather calls for warm and cozy food, and that’s what we will be eating this week. It’s a busy week, so I’m taking advantage of a couple of meals I had made earlier and put in the freezer.
Monday: Hamburger Vegetable Soup – this was yummy the first time, and did make enough to heat up and serve again this week. Bread machine bread as well.
Tuesday: Amish Chicken and Rice – from a new cookbook I got. You know what always cracks me up about “Amish” recipes? They seem to have a big reliance on cans of cream soups, Crisco, etc. – seems kind of ironic given the Amish lack of using modern conveniences. Kind of like the way they won’t own or drive a car, but will ride in someone else’s. Oh well, if it tastes good …
Wednesday:Spinach Stuffed Shells – from the freezer 🙂
Thursday: Enchilada Casserole – this is similar to my recipe, although mine cooks in the crock pot all day. I am a big fan of the crock pot since I generally have much more time to put food together in the morning than in the 3-6 p.m. window.
Friday: Stir Fry – I put a chopped carrot, a few chicken breasts, snap peas (I have a few yet from the garden in the freezer :)), soy sauce in a skillet and cook until done. We eat that over rice.
