Another one of those busy winter weeks. There are many kids’ activities this week, along with giving piano lessons and practicing with students going to musical contest in a few weeks. Also, a navigating high school meeting Wednesday night. Can I do all this and cook too? Sure … I hope 🙂 Here’s the week’s menu plan Monday:
Monday: Pizza Bread – I’ve never made this, but it looks like a yummy alternative to homemade pizza.
Tuesday: Layered Mexican Bake
Wednesday: Spicy Potato Casserole
This recipe was in the paper awhile back in the column written by an Amish lady. The kids love it.
1.5 lb browned ground beef
1 pkg taco seasoning
1 small onion, diced
8 medium potatoes, boiled and shredded (or use a bag of hashbrowns)
4 T butter, melted
2 cups shredded cheese
1 t. salt
1 pint sour cream
1 can cream of mushroom soup
1 soup can milk
2.5 cups crushed corn chips
Combine ground beef, taco seasoning and onion. Put mixture in bottom of 9 x 13 dish. Mix potatoes with butter, cheese, salt, sour cream and soup. Mix with milk. Spoon over hamburger mixture. Top with remaining chips. Bake 45 minutes at 350.
Thursday: fish night – baked tilapia seasoned with spices, and rice. Also a veggie – fish really seems (to me) to need broccoli, but my husband doesn’t like it. So, maybe I”ll make 2 different vegetables.
Friday: Hamburger Vegetable Soup – another new find that looks yummy. I’ll make bread in the bread machine too.
