Menu Plan Monday

menuplanmondayWhat are you having for dinners this week?  I found myself tired of the things I usually make, so I dug a bit to pick things that are either new, or things I haven’t made in awhile for Menu Plan Monday.

Monday: Cheesy Chicken Chowder – my mom emailed this to me; it was in her newspaper.

2 cans chicken broth
2 c. diced, peeled potatoes
1 c. diced carrots
1 c. diced celery
1/2 c. diced onion
1 t. salt
1/4 t. pepper
1/4 c. butter
1/3 c. flour
2 c. milk
2 c. shredded cheddar cheese
2 c. diced cooked chicken
Bring chicken broth to a boil in a saucepan.  Reduce heat.  Add potatoes, carrots, celery, onion, salt & pepper.  Cover and simmer ’til veggies are tender – about 15 minutes.
Melt butter in a pan.  Add flour & mix well.  Gradually stir in milk and cook over low heat ’til slightly thickened.  Stir in cheese & cook ’til melted.  Add cheese mixture to broth & veggies along with chicken.  Cook & stir over low heat ’til thoroughly heated.

Tuesday: Skillet Taco Pie

Wednesday: Three family members will eat at the annual Awana car race; the rest of us will eat leftovers.

Thursday: One Skillet Lasagna

Friday: Tuscan Rosemary Chicken and White Beans – probably with bread from the bread machine

  1. That chowder is almost identical to my “cheeseburger chodwer” [probably from Taste of Home] only I put in hamburger instead of chicken [yes, with chicken brother].
    Car race sounds fun!
