Menu Plan Monday

Another Menu Plan Monday ahead. I’m calling this week “tried and true favorites.” Here it is:

Monday: I have a boxed chicken marsala mix – my 12-year-old has been making dinner (very competently, I might add) on Mondays while I take the other 2 to dance. This should be pretty easy for her to put together …

Tuesday: Cheeseburger Pie – the kids have loved this for years.

Wednesday: Pasta and Peas – this is similar to my recipe, although mine also has a can of diced tomatoes. My husband loved this for years, but I really got tired of it. It’s been awhile since I made it, so I’ll try it again …

Thursday: Tortilla Soup

16 oz. refried beans

14.5 oz. chicken broth

5 oz. chunk chicken (I usually just cook 1 chicken breast)

15.5 oz. black beans, rinsed

3/4 cup salsa

Combine all ingredients.  Bring to a boil, then reduce heat and simmer 10 min.

Crumble a few tortilla chips in the bottom of each bowl.

Ladle soup over chips and sprinkle with cheddar cheese.

Friday: Make your own pizza – I make crust; everyone puts on toppings of choice.

Saturday: It’s a tradition to have leftovers on Saturday.
