Welcome to a new Menu Plan Monday! Honestly, I’m pretty bummed … this healthcare debate has sapped a lot of my energy, and as I’ve discussed with many friends, I feel like it is going in “just in time for me to get old.” What a bummer to have paid in my share for years, and I bet you – just bet you – that once it gets good and established, say in the next 20 years, services for seniors will be nothing resembling what we have today. I know, I know – we have to trust God to take care of it. But after some of the shenanigans our leaders are pulling, I’m fearing that God may be ready to turn his back on our nation.
Anyway, we’ve got to eat. So, here’s what it will be:
Monday: Spaghetti – just basic spaghetti with Ragu (my daughter suggested we have some chicken in the sauce, which sounds good). Probably French bread in the bread machine and a frozen vegetable.
Tuesday: Foil Packet Southwestern Chicken Dinner – my kids love this.
Wednesday: Fish. I’m trying to add more fish to our diet since it’s so healthy. I buy frozen tilapia, put spices on it and bake it. I’ll also have rice and some type of vegetable.
Thursday: Spicy Potato Casserole
This recipe was in the paper awhile back in the column written by an Amish lady. The kids love it.
1.5 lb browned ground beef
1 pkg taco seasoning
1 small onion, diced
8 medium potatoes, boiled and shredded (or use a bag of hashbrowns)
4 T butter, melted
2 cups shredded cheese
1 t. salt
1 pint sour cream
1 can cream of mushroom soup
1 soup can milk
2.5 cups crushed corn chips
Combine ground beef, taco seasoning and onion. Put mixture in bottom of 9 x 13 dish. Mix potatoes with butter, cheese, salt, sour cream and soup. Mix with milk. Spoon over hamburger mixture. Top with remaining chips. Bake 45 minutes at 350.
Friday: Curried Chicken and Chickpea Stew – made it a month or so back; we all liked it. And it’s made in the crockpot so it’s easy.
