Monday: Chicken Curry with rice – the recipe I linked is similar to mine; mine also has spinach in it. I love recipes that include an extra vegetable like that.
Tuesday: Essenhaus Chicken Pot Pie – this recipe was on a card at the grocery and it looked good. I may just splurge and buy a bag of the Essenhaus noodles for it …
Wednesday: Lasagna – I feel like I’m repeating myself from Monday, because I’ll say again that this is similar to my recipe, except mine includes spinach mixed with the ricotta (and I use cottage cheese), and I leave out the beef to make it vegetarian (for health reasons, not philosophical – although I have to tell you, I like as much distance between the animals I eat and myself as possible. The other day I was looking at fish at the fish counter – I mean, fish with their heads and eyes still there. That was a little too real for me).
Thursday: Stir Fry – because I found one last serving of last summer’s garden snap peas in the freezer! I just put chicken, carrots, bean sprouts and snap peas in the skillet with soy sauce and then have that over rice.
Friday: Make your own pizza, where I make the crust and everyone puts on their own toppings. I know I planned to make this last week, but I ended up with an “easy night” and made a frozen pizza instead.
Last but not least, Toy Lady experimented with my Cheeseburger Buns (well, I say “my” although they’re not). She had great results. I highly encourage you to head over there and learn from her!
