Menu Plan Monday

Okay, I’ve got the week’s Menu Plan Monday together. It’s another week where I don’t need many items from the store, which is great.

Monday: Chicken Curry with rice – the recipe I linked is similar to mine; mine also has spinach in it. I love recipes that include an extra vegetable like that.

Tuesday: Essenhaus Chicken Pot Pie – this recipe was on a card at the grocery and it looked good. I may just splurge and buy a bag of the Essenhaus noodles for it …

Wednesday: Lasagna – I feel like I’m repeating myself from Monday, because I’ll say again that this is similar to my recipe, except mine includes spinach mixed with the ricotta (and I use cottage cheese), and I leave out the beef to make it vegetarian (for health reasons, not philosophical – although I have to tell you, I like as much distance between the animals I eat and myself as possible. The other day I was looking at fish at the fish counter – I mean, fish with their heads and eyes still there. That was a little too real for me).

Thursday: Stir Fry – because I found one last serving of last summer’s garden snap peas in the freezer! I just put chicken, carrots, bean sprouts and snap peas in the skillet with soy sauce and then have that over rice.

Friday: Make your own pizza, where I make the crust and everyone puts on their own toppings. I know I planned to make this last week, but I ended up with an “easy night” and made a frozen pizza instead.

Last but not least, Toy Lady experimented with my Cheeseburger Buns (well, I say “my” although they’re not). She had great results. I highly encourage you to head over there and learn from her!

  1. Friday evening I had guests for dinner. I served a recipe you featured a fortnight ago – Zesty Chicken Tortilla Bake. I loved that I had every ingredient on hand, pretty much. I did not have flour tortillas but had corn tortillas and used the corn ones. The recipe makes A LOT! I really like it and still have another untouched casserole of same in the freezer. Good as money in the bank as far as I’m concerned. Thanks!

  2. OK, so WHAT are Chicken Pot Pie Noodles? 😕 Some of my “old favorite” recipes came from the supermarket – and I haven’t made my Italian sausage with cannelini beans artichoke hearts in AGES.

    And, um, thanks for the mention – to me, it’ll always be YOUR cheeseburger buns. 😉

  4. It’s Saturday and I’m enjoying some MPM blog visiting while watching “Inspector Alleyn Mysteries” on Netflix.
    I love a good mystery.

    It’s time to expand my recipe sources with some new ideas.
