Menu Plan Monday

Another week, and we’ve all gotta eat – here’s the menu plan Monday for the week:

Monday: Broiled Parmesan Tilapia – You know I’ve been trying to fit more fish into our menus since it’s so healthy. This recipe comes from a blog I like; the lady posts lots of great deals and recipes that are my kind of cooking (read: easy; she has 6 kids). I’m sure I’ll modify it a bit (I can’t see putting a lot of butter on it, etc), but it does sound yummy.

Tuesday: White Bean Chicken Chili – because now that it’s almost spring, we need to make soup quick before it gets too hot. Right? Right?

Wednesday: Oven Roasted Chicken and Vegetables

1 pkg. onion soup mix

1/4 c. olive oil

1/2 t. garlic powder

2 lb. chicken breast halves

1 lb. chopped potatoes

2 sliced carrots

Preheat oven to 450.

Mix ingredients; put into roasting pan.

Bake uncovered 45 min.

Thursday: Homemade pizza – I make the crust; everyone puts on the toppings they like.

Friday: I went “shopping” in my pantry and found some Macaroni Grill Chicken Marsala that should be used – this looks like the night.

I have to say that Zesty Chicken Tortilla Bake from last week was a winner – I’ll be making it again. Tasted like something from a restaurant!

  1. The Talapia and the Chicken Tortialla bake sound worth a try. We’re nearing Spring so we’re all craving a little lighter food.

  2. I would like to include fish in our menu too but what would you consider a bargain price for fish?
