Menu Plan Monday

Another winter week, another week of menu plans for Menu Plan Monday:

Monday: Chicken Parmesan

1 jar marinara sauce

4 chicken breast halves

2/3 c. shredded mozzarella

1/4 c. bread crumbs

2 T. olive oil

noodles

Pour marinara sauce in bottom of ungreased 12 x 8 dish.

Place chicken over sauce.

In small bowl, mix cheeses, bread crumbs and oil. Sprinkle evenly over chicken.

Bake at 350 30-35 min.

Serve over noodles.

Tuesday: Cavatini Casserole

1 lb. ground beef

2 chopped onions

12 oz. tomato paste

8 mozzarella cheese

5 c. uncooked pasta

1 chopped green pepper

2 pgk spaghetti mix

4 cups water

Brown meat; add pepper and onion; drain.

Add spaghetti mix, tomato paste and water; let simmer.

Cook pasta.  Layer pasta, cheese and meat sauce in 9 x 13 pan.

Bake 30-40 minutes at 350.

Wednesday: Oven Roasted Chicken and Vegetables

1 pkg. onion soup mix

1/4 c. olive oil

1/2 t. garlic powder

2 lb. chicken breast halves

1 lb. chopped potatoes

2 sliced carrots

Preheat oven to 450.

Mix ingredients; put into roasting pan.

Bake uncovered 45 min.

Thursday: Slow Cooker Orange Chicken with rice; I made it before and it was pretty good. Similar to the orange chicken you get at the Chinese places.

Friday: Three Cheese Manicotti – yum!
