Monday: Fazoli’s. If you live near a Fazoli’s and haven’t signed up for their emails, do. They sent out an email where tomorrow only, a child can eat free for each adult meal. That was too good a deal to pass up 🙂
Wednesday: Corn and Spinach Enchiladas. I have some spinach I need to use, and found this recipe. I like using the crockpot, too.
Thursday: Southwest Chicken Lasagna. I am not having any success finding the recipe – it’s one I made a double batch of last month, and I’ll pull it out of the freezer. Yeah, I know it’s a Mexican-heavy week, but when you’re busy you just have to go with what you have.
Friday: Tilapia – I bought a few bags of it at Meijer last week, inspired by a book I’m reading on healthy eating. Fish is so healthy, but I make it – like never. I’ll just bread it in something and bake it. If you have any good ideas for the breading, I would appreciate them. Then I will also make rice and a veggie.
