Menu Plan Monday

menuplanmondayRecovering from Thanksgiving wee this Menu Plan Monday: thankfully (yes, thankfully, because I like turkey), we have turkey leftovers.  They are going to be part of 3 meals this week:

Monday: Wild Rice Turkey Pot Pie – Bisquick sent an email the day after Thanksgiving full of leftover turkey ideas, which I thought was a great idea.

Tuesday: Chicken Curry – with the coconut milk from our trip to Trader Joe’s a couple of weeks ago.  Also, I got a rice cooker for early Christmas last weekend so this will be a chance to use that (does anyone have a rice cooker?  Do you like it?)

Wednesday: Hot Turkey Sandwiches – courtesy of Toy Lady.  I can just tell from her blog that Toy Lady is a great cook – kind of Martha Stewart with a more approachable attitude and a great sense of humor 🙂

Thursday: Make your Own Pizza – I make the crust; everyone puts on the toppings they want.

Friday: Impossibly Easy Turkey Ranch Pie – thanks again to Bisquick.  The ranch seasoning in this sounds great …

  1. Wish I could visit for some wild rice turkey pot pie. I do love pot pies!

    Glad you made it home safely (my assumption since you didn’t mention anything to the contrary).

  2. YUM, leftover turkey. And leftover rolls, cranberry sauce, gravy, pie… I think I had a bigger meal the day after Thanksgiving! I raise my eggnog to leftovers!

  3. I miss Thanksgiving leftovers – while it’s nice not to have the responsibility for the whole dinner, it’s kind of lousy not to get a turkey sandwich the next day.

  4. Cooking a Thanksgiving dinner is a lot of work. But the dividend comes with the leftovers. That is pretty much all I’ve consumed since Thanksgiving. It has been delicious. I have never received so many compliments on my meal as I did Thanksgiving. Everybody said, “Next time, don’t change a thing!” For the first time, I did my turkey breast in a large crock pot. I believe that will be a new tradition here.
