The Cookbooks Shelf

mpmCookbooks.  I don’t collect them, they don’t especially excite me – I’ve just amassed the usual number over the years.  They’re all stored inside a kitchen cabinet:

IMG_5323Big ones, little ones, bunches of freebie booklets from various food manufacturers.  I decided to pull one out this afternoon to inspire my menu planning for the week.

The one I pulled out was by Campbell’s.  It’s old – maybe 25 years?  I remember using it when I was first out of college.  Most of the recipes are centered on using a can of soup, and they’re quick and easy – just what cooking should be, in my world.

Here’s what I came up with:

Monday: Deep Dish Turkey Pie

Tuesday: Garden Skillet – This will be great for using zucchini and tomatoes from the garden.

Wednesday: Crockpot Chicken Jambalaya – from last week’s plan; didn’t get around to it then.

Thursday: Chicken and Noodles – with homemade noodles – try them; they’re easy.

Friday: Stir Fry – No recipe; I just put 1 cut up chicken breast into a skillet along with a chopped carrot, whatever veggies I may have from the garden, bean sprouts and soy sauce.  Then I serve it over rice.

  1. That all looks good! You’ll have to tell us how the Chicken Jambalaya tastes! I better go help my sister get Max back upstairs.. he’s not allowed down there.

  2. I wish I lived closer. I’d love to join you some evenings for dinner. Some of those things sound delicious.
