Menu Plan Monday

mpm1Time Menu Plan Monday again – it seems like this comes around more than once a week!

First, some notes from last week.  The Thai Slow Cooker Chicken was really good, as were the Black Bean Quesadillas.  The Amish Friendship bread was yummy as well, and I kept a starter so I can make more in ten days.

This week:

Monday: Taco night … I make chicken with taco seasoning, then put out refried beans, lettuce, cheese, tomato, etc – everyone can do what they want.

Tuesday: Baked Potato night … at oldest daughter’s request.  I will probably have cheese, broccoli and sour cream.

Wednesday: Poppy Seed Chicken (which thankfully is frozen from a prior week when I made a double batch).

Thursday: Roasted Chicken and Vegetables

Cut up three chicken breasts, two carrots, and three potatoes in a roasting pan.  Mix with an envelope of dry onion soup mix and 1/3 cup olive oil.  Bake for 45 minutes at 450.  So easy, and yummy – this is one of my favorites.

Friday: Hamburger Helper (I hang my head in shame as all your impressions of me as Martha Stewart evaporate … actually, Hamburger Helper is one of my kids’ most-requested meals!)

  1. If you have the coupon & form, when you shop today, buy the Sargento Potato Finisher’s new product. The package says, “Just add potato”. With the form, you get what you paid for it back.

  2. The poppy seed chicken is a southern staple! I haven’t made it for a while though. I’ll have to remember and put it on my menu soon.

    Hey, don’t feel bad about the Hamburger Helper…one of my kids’ most requested meals is Kraft Macaroni & Cheese! Every so often we even break down and have cereal for dinner on a really rough night.

    We’re having taco night and baked potatoes this week, too.

    Everyone has a secret “quick meal” weakness. That’s my story anyway.

    Well, getting kids to eat eggplant isn’t hard when you layer it with cheese. 🙂 I’m blessed with a son who just likes to eat almost any food: he even begs for brussels sprouts.

  5. I love what you are doing on Wednesday with the frozen meal from a double batch made last week. I’ve been trying to do that more…it’s great, isn’t it? I don’t know why I don’t schedule a double meal once a just makes sense!

  6. We also love the poppyseed chicken and have it frequently (if we don’t have sour cream on hand we use cream cheese), but we’ve never made ahead and frozen it – I love that idea!
