Menu Plan Monday

mpm3Today I bring you the Spring Break Edition of Menu Plan Monday.  What does that mean?  It means we’ll be gone a few days, so there are no menus to plan 🙂

My husband will be gone for work the first part of the week, so I let the girls vote on favorites for those few days.  And I don’t want to leave you recipe-less, so I’ll still list some for the days we’ll be out.

Monday: Cheeseburger Buns.  I made these a few weeks ago, and they became an instant hit.  I made some of the filling without onions for the kids.

Tuesday: Poppyseed Chicken.  Another perennial favorite with the kids.  I use crushed saltines rather than Ritz.

Wednesday: No Fuss Lasagna.It’s no fuss because the noodles don’t need to be cooked ahead.  I usually add a package of frozen spinach (thawed) for an extra veggie, and I sub soy crumbles for the ground beef.

Thursday: Easy Chicken Chili.  (recipe from my aunt) – we tried it this week and it was good!

1 large can Northern white beans, do not drain

1-2 cups tomato salsa

1 small can green chilies, drained and chopped fine

Chopped cooked chicken

8 oz block of pepperjack cheese, broken into pieces

1 can of whole kernel corn

Put all in crockpot, set temperature to low, serve when hot through and cheese is melted (at least three hours, but can stay cooking all day). Serve with tortilla.

Friday: Tuscan Chicken.  I made this last week – yum!

  2. These recipes all sound so good! I love the chili recipe from your aunt, and I also like the poppy seed chicken recipe.

    What am I doing tonight? Ashamed to admit it, but takeout. Mr. Magpie isn’t here so I will be dining alone. I had some really naughty pastry things for lunch with spianch and ricotta cheese. Don’t tell, be they are actually an appetizer from a box of frozen appetizers that I decided I was ready to eat. LOL!

    Have fun on break. I took a bloggy break recently, and I’m trying to play catch up now. Wanted to drop by and say, “Hello.”
