Menu Plan Monday: Back to Healthy

Christmas is over, and it’s back to real life.  One of the aspects of “real life” is cooking.  Actually, after all the excess of the holiday (AND after 4.5 days without power just preceding it), it’s kind of nice to settle into normalcy.

This week my plan is to get us away from the sugar and back to healthy eating.  Since everyone is home this week (no work, no school) I asked each person last night for a request for dinner one night.  Each night, at least one person will be happy!

Also, lest you wonder how some of these are healthy, I’ll list what I do after each.

Monday:  Baked spaghetti (I use soy rather than beef and low-fat cheese)

Tuesday:  Calico Beans (I don’t add the bacon and sub. soy crumbles for ground beef)

Wednesday:  Homemade Pizza

Thursday:  Cheeseburger Pie (again, soy rather than beef and low-fat cheese)

Friday:  Hamburger Potato Casserole (again soy – hmmm, I’m realizing this is an odd week as we’re usually much heavier on chicken than on hamburger)

  1. I want to quit eating (and paying for) so much meat, but how did you figure what works for substitution?

    And does the food tastes really different? Different consistency?

    Can I trick people or will they know?
